Duck Ragu Recipe

Tannat is a wonderful rustic grape variety from the South Western Region of France. The wines are typically strongly flavoured and high in acid and tanning. Pairing Tannat with food is best achieved by going for a hearty dish.

Symphonia vineyards in Victoria's King Valley make a fine Tannat wine and winemaker Sam Miranda has agreed to share his recipe for Duck Ragu which he believe is the perfect match for Symphonia Tannat
